Thanks for writing in and providing such detailed information. You definitely have some great experiences that should work well in application essays.
Your extracurricular work with Nuru is unique and I recommend you devote a full essay, or a substantial portion of one, for each application so that the admissions office can fully understand this work you do outside of the office. You also seem to have good leadership experience through your first two jobs, which should provide a good source of data when writing about teamwork and leadership style - two topics that often come up in application essays.
Your GMAT is a bit of a mixed bag - you managed to reach the 80% threshold on both subject areas, which is a plus, and a 690 is within range at the schools you mention, but it is neither a strength nor a weakness.. I think you have the right approach of focusing on applications now, and, if time allows, re-taking the GMAT in the fall if you think you could improve it. Only your highest score counts, so there’s no negative impact if you do score below 690.
In terms of your mix of schools, I believe you will be competitive, and yes, good essays often can overcome many deficiencies. If you are concerned a job in "Operations" will pigeonhole you into a segment, then make sure your essays demonstrate that you are well-rounded (again, your Nuru experience should work well here). The only thing I would suggest is adding one more safety school (along the lines of a UNC or Texas) to diversity your chances.
