Hi Tutors,
I remember seeing this question in GMAT Prep some time back but could not note it down then.
However, I remember the basic structure.
It went something like :

Afganis destroyed African constructions, including a Gothic Castle,an enclave consisting of many buildings "that signify X"
A)that signify X
B) that signifies X

I do not remember what went in X, but it went pretty well with constructions, enclave as well as buildings
I am highly confused, as to which one should i take as a subject in such sentences?

Could you please help?

this could go either way, actually; you'll have to supply more context, so that we can use that additional context to determine which way the verb could go.

normally, this sort of modifier ("...that does this-or-that") modifies the noun or thing coming directly before. however, it can also modify entire phrases, including things such as "an enclave consisting of many buildings".
for a precedent, check out #50 in the diagnostic exam at the front of the OG. in that problem, there's a "that" modifier, almost exactly like this one, that modifies a huge noun phrase instead of just the single noun ("internet") appearing directly in front of it. of course, there's no way to figure this out based on grammar alone; the context and meaning of the sentence help as well.

you may also want to use the search box to turn up threads about a different problem, involving "a patchwork of green fields" (actually it may have been one word "greenfields" - try it yourself and see what you come up with). if i remember correctly, that problem presents the same sort of issue.
