Danish Queen Margrethe II

FoV, 6th Edition, Chapter 2, Drill 2.5.

Q. Circle all adjectives.

4. Danish queen Margrethe II is the first female monarch of Denmark since Margrethe I, who took the throne in 1388.

In the answers, it is given that Danish is an adjective and rightly so since it modifies queen.

My question is why will "queen" not be an adjective? Doesn't it modify Margrethe II?

Sure, it modifies 'Margrethe II', but it's not an adjective. Nouns can be modifiers too! For example: 'My dog, a Labrador, is huge.' The bold part is a noun and is giving extra information about (modifying) 'dog'.
