Noun and That Question

Manhattan Prep says: A noun followed immediately by the word “that” signals a noun modifier.

What is an example of this?

I can't think of one without using a verb (e.g. The cat that likes to drink milk is very soft)

I can't either, and that's ok! The "that" still describes a noun (the cat), so it is indeed a noun modifier. The fact that the modifier has a verb in it just means that you can call it a "subordinate clause" (clauses have verbs).

There is a nursery rhyme (https://en.wikipedia.org/wiki/This_Is_the_House_That_Jack_Built) that plays on this idea. Here's an excerpt:

This is the cow with the crumpled horn
...That tossed the dog
...that worried the cat
...that killed the rat
...that ate the malt
...that lay in the house
...that Jack built.
