THAT vs. WHICH ??

Can someone please clarify the strategy to use for "that vs. which" sentence correction problems. I know that one is restrictive and one is not, but I'm not sure what that means. Also, is it true that on the majority of GMAT questions, "which" is proceeded by a comma?

Our guides do discuss this issue.

Basically, when the information you want to relate is necessary to the meaning of the sentence, use "that." When the info is just additional, use "which." And yes, use commas when you use "which," to show that the info you are presenting is subordinate.

Mnemonic: "Commas, which cut out the fat, go with 'which,' never with 'that.'"
