the persuasion of people to eat what had previously been horse feed restored market equilibrium was restored.

I'd appreciate some explanation on the usage of gerund.

please check the source. if it's an internet source, then you should be able to find it fairly quickly with google (or any other search engine).

it's almost certain that you've copied something incorrectly; even an incorrect answer wouldn't contain something as egregiously wrong as "restored market equilibrium was restored".
