In these sentences is We the subject and 'The security guard' the object ?
If so then I can make sense of the rule given in the guide.

You are right with "we" being the subject. Notice what is written in the SC guide
"Who" is as the subject of the verb in the relative clausewe have to look for subject and object in the relative clause only.
Now, let's see the both examples one by one.
Wrong: The security guard
WHO we met was nice.look into the HIGHLIGHTED part only.
Subject - We
Verb - met
then here WHOM is required because 'whom' is used as the object of the verb or of a preposition.
Right: The security guard WHOM we met was nice.
I will offer job to the boy
whom I interviewed last week.Subject - I
Verb - interviewed
so WHOM is correct here and is working as object.
let's see another example -
I will offer job to the boy
who works in my office.
Subject - Who
Verb - works
who refers correctly to boy.
